Why it feels hard

Italian food was made to look difficult, so you'd keep paying for it.

The jar

Tomato, oil and garlic, cooked too long and sold back to you at ten times the price.

The delivery box

Flour, water, yeast and salt. A few cents of ingredients plus someone else's evening.

The gadgets

You were told you need a stone, a mixer and a pasta machine. A pan, a pot and a few honest tricks are enough.

If your sauce tasted flat or your dough never rose, it was not you. Nobody showed you the simple way.

An old Italian home kitchen with fresh pasta drying on the table

Why this book exists

My nonna never measured anything. So I wrote it down.

In her kitchen in Puglia nothing came from a jar. Orecchiette dried on a cloth by the window, the sauce simmered while the bread toasted, and dinner for eight came out of a few cheap, good things.

I have cooked that way my whole life, for family, friends and anyone who stayed for dinner. What I learned is simple: the honest way is almost always the easier way.

This book is every dish I cook, each with the one small decision that makes it work. Learn the tricks and the recipes become yours.

What you were toldWhat Luca does insteadRecipe
Cream in the carbonaraMake the sauce off the heat, using the pan's residual warmth and hot pasta water while stirring constantly.Carbonara, with no cream
Stiff besciamella for lasagneMake the besciamella looser, about the thickness of heavy cream, because the pasta drinks liquid as it bakes.Lasagne alla bolognese
Knead the dough wellUse a wet dough and a long slow rise, adding no flour, so the gluten builds itself.No-knead country bread
Simmer saffron into risottoSteep the saffron in hot broth and stir it in during the last few minutes to keep its perfume.Risotto alla milanese
Blend pesto until smoothKeep everything cold and pulse in short bursts so heat does not bruise the basil dark and bitter.Pesto genovese
Soak ladyfingers throughDip the ladyfingers fast, one second per side, so the center stays firm and softens slowly in the fridge.Tiramisu

Questions

Before you cook.

What exactly do I get?

A 259-page PDF you download straight after checkout. It opens on any phone, tablet or computer and prints well if you like paper in the kitchen.

Is this a printed book?

No, it's a digital book (PDF), so there's no shipping and no waiting. You can print any recipe, or the whole book, at home.

I'm not a confident cook. Is this for me?

Yes. Every recipe fits on one page, with short steps and the cues to watch for. Start with Weeknight pasta: most of those are quick dinners from a handful of ingredients.

Can I find the ingredients?

Almost everything is in an ordinary supermarket. Every ingredient is pictured, and where an Italian cheese or cut is hard to find, the recipe suggests what to use instead.

Cups or grams?

Both, on every recipe. Oven temperatures are given in °F and °C.

What about food safety?

Every meat, poultry and fish recipe gives the safe internal temperature, and the few classics with lightly cooked egg tell you when to use pasteurized eggs.

What if I don't like it?

Reply to your download email within 7 days and you get a full refund, no questions asked. See the refund policy.

Why is it only $17?

It's the launch price. You pay once and keep every future update of the book, free.
